About us and baking practices: Owner is Culinary Institute Trained Baker/Pastry Chef, raised in California by a produce professional. The bakery is dedicated to using as much local, sustainable and organic produce and products as well. Business was started in New York Farmer's Markets in 1996. We use Boice Bros. milk products, some New England Farms organic milk, Cabot (Vermont) butter, King Arthur flours, organic spelt, and some organic sweeteners. Our fruit sweetener comes from a dairy farm in Washington. Our standard of food is based on this--the least processed, handled and manipulated: the better tasting, nutritionally sound and ecologically responsible food is. We are ALWAYS open to any local sustainable food producer which is able to deliver.

What: Working in synergy with our restaurant, Gigi Trattoria in Rhinebeck, Gigi Market in Red Hook celebrates the bounty of the farms and food artisans of the Hudson Valley. Here we provide a year-round retail venue for local producers. Gigi Market is also a lunchtime café; a site for events, large and small, indoor and outdoors; and the base location for Gigi Catering. In addition to the market space, we have leased 10-acres on the fertile 500-acre Greig Farm property.
